When you cut grass, it releases chemicals. One main chemical is “cis-3-hexenal.” The grass does this to alert other plants that it’s been damaged. This chemical gives the fresh smell we notice after mowing.
Now, why do we like this smell? Our brains have evolved to like certain scents. This grass smell might remind us of healthy, green places suitable for our ancestors. So, we’re naturally inclined to find it pleasant.
About 85% of the fresh-cut grass smell comes from chemicals like cis-3-hexenal, and these compounds are called green leaf volatiles. Interestingly, this same chemical is found in apples. So, when you smell cut grass, it’s related to some scents from fruits we like.
