Is Sugar a Preservative?

Sugar acts as a preservative by creating an environment that inhibits the growth and survival of microbes, such as bacteria and molds, which lead to food spoilage.

 

When sugar is added to food, like jams or jellies, it increases the amount of sugar molecules in the food. This high concentration of sugar creates an environment in which the water present in food becomes less accessible. Let’s see how.

 

Microorganisms require water to carry out essential functions and reproduce. The water is mostly present along with salts and other biomolecules in their cytoplasm. On adding sugar to a certain food item, the sugar concentration in the food matrix rises and becomes more than the concentration of biomolecules and salts present in the cytoplasm of the microbe.

 

Water tends to move from a region of low-concentration solution to one with higher concentration. This happens only in the presence of a membrane, through which only water can pass, but none of the solutes in it. This type of membrane is called semipermeable, and the cell membranes of microbes are just like this.

 

As a result, water seeps out of the microbial cell, and into the food matrix. This dehydrates the bacteria or mold that can potentially spoil the food item. As a result, these microbes are killed, increasing the shelf life of the food item.

 

Scientific studies provide evidence for the preservative effects of sugar. For example, experiments with strawberries have shown that immersing them in a sugar solution significantly extends their shelf life. In one study, strawberries treated with a sugar solution lasted up to two weeks longer than those without sugar.

 

This data demonstrates that sugar is crucial in preventing food spoilage by creating an inhospitable environment for microorganisms. The elevated sugar concentration reduces the available water, making it challenging for microorganisms to grow and multiply. As a result, the shelf life of food is extended.
